Hmm, you know I don’t remember what way I did it! I think in this case I would have added them to the boiling water, as that’s how I blanch most veggies. It might bet the type of potatoes though. I find […]

I quartered the potatoes and I did use fresh water. When you boil the potatoes are you putting the potatoes into boiling water or are you putting the potatoes into the water before you bring it to a boil? I put […]

Wendy, I’ve canned potatoes a few times and they kept their shape ok. I’m wondering if you cut them to small or cooked them to long before canning? I pealed them, and cut into 1/2 inch to 1 inch cubes, then […]

I finally got a pressure canner. It was given to me about 4 months ago. so far I have canned chicken, fruit coctail, cinnamon pears, grape & cherry jam, and Strawberry & Cherry jam. I bought a bushel of johnathan apples and will be getting them canned, along with the few tomatoes that actually grew this year.

Lucky you getting fresh apples!!!

I’m thinking about getting some more, if they still have any of them. canned apple pie filling is sounding yummy for mid winter

grrrr, after paying almost 10 dollars a dozen for canning jars all summer, I found an Amish store that sells them for 4.00 a case.
Oh well, live and learn, I will be picking up some serious jarage in a couple of weeks. I have been allowing myself 20.00 a month for jars, this month, I will have loads of them to get filled up.
Look out loft, your…[Read more]

Whew it’s been a busy gardening season..in spite of the lack of rain my tomatoes and yellow beans went insane. So the tally so far is 29 pints of beans,10 quarts of beans,12 quarts of tomato sauce,25 quarts of halved tomatoes,3 quarts of salsa(my treat to myself) and still the tomatoes keep on coming. Not bad for 8 plants
plus some small batch…[Read more] -

Wondering if anyone has a measurement system I could used for refrigerator pickles or something like that? I have only enough cucumbers in my garden for one jar of pickles and wanted to just make them and leave them in the frig…not enough to can. Would appreciate any help you could offer. Would need to do them by tomorrow at the…[Read more]

I have two recipes for freezer pickles if they would help? I can try and find them for you. Another idea would be to take a normal pickle recipe and divide the brine by the number of jars the recipe gives. That should give you an aprox. amount of liquid to mix up. Prepare the pickles as you normally would but put them in the fridge.
