    Do you have a temperature control and fan on your dehydrator? I used to have a dehydrator that was heated with a light bulb that was not near as good for dehydrating because it seemed to burn everything.

      The dehydrator I have ( borrowed) is just a plug in. there are vents on the bottom, and top of it, I guess to control the temperature. it didn’t come with an operator’s manual.

  • Jo, I have only had bananas turn out chewy…We even call it banana “jerky” or “leather”. It is very chewy but very sweet like chewy sticky candy. I don’t dip mine in pectin or lemon juice so they do discolor to a grey/tan somewhat, but I’ve heard dipping them will help them hold their color…you may want to try that.

    Fermented food is high in probiotics. Keeps your digestion balanced…supposed to be the key to health. According to some people, antibiotics, chlorine in water, and other things, kill the good bacteria in the gut. Eating fermented foods is supposed to replenish the good guys.

    • I finally got brave and did it that way on the last two banana’s. The first two turned out great, nice and dry, will be powdering them today. But the last 5 turned out soft and sticky. 3 of them I sliced and the last two, I did as suggested, and went right up the middle.

      • please forgive the whining. I almost cried when I saw how they came out of the dehydrator.

    I think Sauerkraut is what most people start with. I do sauerkraut, kimchi, and kombucha tea. Also have been experimenting with a beet/red cabbage mixture that I call red relish sweetened with apple and stevia.
