It was given to me about 4 months ago. so far I have canned chicken, fruit coctail, cinnamon pears, grape &#038; cherry jam, and Strawberry &#038; Cherry jam. I bought a bushel of johnathan apples and will be getting them canned, along with the few tomatoes that actually grew this year.</p>

						<p>Whew it's been a busy gardening season..in spite of the lack of rain my tomatoes and yellow beans went insane. So the tally so far is 29 pints of beans,10 quarts of beans,12 quarts of tomato sauce,25 quarts of halved tomatoes,3 quarts of salsa(my treat to myself) and still the tomatoes keep on coming.Not bad for 8 plants :) plus some small batch canning of jams,fruit preserves,beets and other garden goodies. Hope everyone else has a blessed harvest and happy canning:)</p>

						<p>Wondering if anyone has a measurement system I could used for refrigerator pickles or something like that?  I have only enough cucumbers in my garden for one jar of pickles and wanted to just make them and leave them in the frig...not enough to can.  Would appreciate any help you could offer.  Would need to do them by tomorrow at the latest.</p>

						<p>It's time for canning!!  So far 7 quarts of whole tomatoes, 14 pints of Kim's recipe for bread and butter pickles, 7 pints of zucchini bread and butters, 35 1/2-pints of pizza sauce and 30 pints of peaches.  Also froze a whole bunch of zucchini, shredded and in 2 cup baggies.  So how are all of you doing?   Thinking about corn products now.   ALso have a huge kettle of V8 juice simmering.  What are you up to?</p>

						<p>I canned a batch of Loquats on Sunday... added zero sugar so we'll see how I like them in the winter!  Next batch I'll make regular jam because I've never tried it... this is the first year my trees have produced enough to eat fresh and can.  I doubt they can be dehydrated... they are a very juicy fruit that browns easily.  If you look at the picture for this group (Preserving the Harvest), the loquats look EXACTLY like that! They are really delicious fresh, but I doubt you can capture the same essence when they're canned.  We'll see.   </p>
<p>Where I live (So. California), there are LOADS and LOADS of this fruit completely untouched and ignored in people's gardens!  One tree will produce (thousands?) of fruit just under the size of an egg in clusters of about 8-10 fruit.  I think they are also called "Japanese Plums."  They are very juicy, floral/tropical sorta flavor.  YUM!</p>
