Salsa Meatloaf (1 post)

    A delicious zippy twist on an old favorite. 

    1/2 pound lean ground round or ground chuck

    1/2 pound lean ground turkey

    2 eggs, beaten

    1 cup bread crumbs

    1/4 cup skim milk (or what you have on hand)

    1 cup chunky salsa (make it mild or spicy… your choice!)

    1/2 tsp salt

    1/2 tsp pepper

    1.  Combine all ingredients in a medium size bowl and mix well.

    2.  Form into a loaf shape.

    3.  Place in a loaf pan, on a rack to drain the fat if you have one.  You can also place it in a casserole dish made for baking.  If you don’t have a rack to allow fat to drain, you can take a large piece of aluminum foil and crumple it up and place that under the loaf.

    4.  Bake at 350 degrees F for 1 hour. 

    5.  Let stand 10 minutes before slicing.

    Serve topped with more salsa, garlic mashed potatoes and a green veggie.

    Diet exchanges:  3 meats, 2 breads, 1 veg and 1 fat per serving.
