This is a delicious torte for using up that wonderful rhubarb. Always a hit at gatherings.
Crust:
2 cups flour
3/4 cup brown sugar
3/4 cup shortening
1 cup oatmeal
1/4 tsp salt
Blend all above ingredients together until resembles course crumbs. Spread into bottom of a lightly greased 9x13x2 in pan, reserve 1 cup of mixture for topping.
Filling:
6 cups rhubarb cut fine
2 1/2 cups sugar
1/2 cup flour
1/4 tsp salt
8 medium eggs, well beaten
Combine all the above ingredients and pour over crust. Top with the reserved topping.
Bake at 350 degrees F for 1 hour and begins to brown on top.
Serve warm with homemade vanilla ice cream. Delicious!
