One of my favorite parts of a holiday meal is the stuffing!  While I normally cook this on the side, I guess technically it would be called dressing right?  But our family has always called it stuffing, perhaps it’s a Canadian thing.

This is our family’s favorite stuffing recipe.  I start it off with homemade sausage, similar to the sausage hubby makes for his pizzas, but with a little less salt.

A note, if you are using this to stuff a chicken or turkey do not add the full amount of stock in my recipe!  I would add 1/2 to 2/3′s of a cup of stock.  Then mix it to gather and spoon lightly into the bird’s cavity.  As the stuffing cooks it will absorb a lot of liquid from the turkey.

Hi everyone!  I didn’t intend for such a long time between postings.  Dec/Jan is a busy time for us and often I would go to write a post and something would come up.

It’s really cold here today, last night went down to -15 C not including the wind chill.   Burr!!  I’m working at getting caught up on things today.  Friday  coming home the idler pulley broke on the van, so dh spent Sat. tracking down a part and fixing it.  Then another snow storm moved in that evening.  WOW were the winds ever strong!  Many times that evening we couldn’t see out out windows for the blowing snow.  The next morning we had a foot of snow in the driveway, and of course a small mountain at the bottom of the driveway.  A nice gift from the snow plow. lol  Only problem with that was the snowblower wouldn’t start!  It took dh most of the morning to get it running.  Turns out the float in the carb was frozen real bad.  Not real impressed for a brand new snowblower to be giving us problems already.  It has less then 15 hours running time on it.  Some times I think you just can’t win.  If you buy an old one your fixing it constantly.  If you buy a new one it breaks anyway.  At one time you would spend good money for a new item and it would LAST.

I’ve made a few new videos this past week.  One is for my rice pudding recipe and the other for my hot chocolate mix.  I hope you enjoy!  I filmed a basic bread baking video this weekend as well.  I hope to have that up soon to.

Our zucchini plants are starting to produce.  So it’s time to start making our favorite quick bread.  Zucchini bread!  I started making this on Sunday only to discover I was short on eggs.  Hmmm…  I found some egg less zucchini bread recipes using yogurt as a substitute and decided to give that a try.   It worked great, and I’ll keep making it that way.  If you don’t have yogurt on hand then use 4 eggs to replace it.

Zucchini Bread

  • 2/3 cup plain yogurt
  • 1 cup oil
  • 2 cups white sugar
  • 2 tsp vanilla
  • 2 cups shredded zucchini
  • 3 1/2 cups flour
  • 1 tsp salt
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 2 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

Combine yogurt, oil, sugar and vanilla in a bowl and beat together.  Stir in zucchini.  Combine dry ingredients and stir into yogurt mixture.

Bake at 350F for 60 minutes or until cooked through.

We are starting to can our bean crop. This is so easy to do!

Simply wash your beans, trim the ends off. Then cut or break into pieces about an inch long.
Fill the jars leaving 1 inch head space.
Add 1/2 tsp salt per pint, 1 tsp salt per quart. The salt is optional but does help to keep the color and taste.
Fill the jars with boiling water, leaving an inch of head space.
Wipe rims, add lids.
Pressure can pints for 20 min, quarts for 25 min.

This is how we make our garlic bread.  Goes great with pizza or pasta.  Hope you enjoy!

Also here is a link to our pizza making video. You can see how we make the dough and prep there.
