One of my favorite parts of a holiday meal is the stuffing!  While I normally cook this on the side, I guess technically it would be called dressing right?  But our family has always called it stuffing, perhaps it’s a Canadian thing.

This is our family’s favorite stuffing recipe.  I start it off with homemade sausage, similar to the sausage hubby makes for his pizzas, but with a little less salt.

A note, if you are using this to stuff a chicken or turkey do not add the full amount of stock in my recipe!  I would add 1/2 to 2/3′s of a cup of stock.  Then mix it to gather and spoon lightly into the bird’s cavity.  As the stuffing cooks it will absorb a lot of liquid from the turkey.

Sausage Stuffing

Prep Time: 20 minutes

Cook Time: 1 hour, 25 minutes

Total Time: 1 hour, 45 minutes

Ingredients

    For the sausage
  • 2 lb ground pork
  • 4 cloves garlic minced
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 TBS Oregano
  • Bread mixture
  • 12 Cups bread cubed
  • 2 Cups Onion chopped
  • 1 1/2 Cups Celery Chopped
  • 1 Tsp Thyme
  • 1 TBS Rosemary
  • 1 1/2 TBS Sage
  • 2/3 Cup Parsley fresh, chopped
  • 1/2 Cup butter melted
  • 2 Cups Chicken or turkey stock

Instructions

    Bread
  1. Cut bread into cubes and spread out on baking trays.
  2. Bake at 350F for 5 to 10 minutes until toasted.
  3. Set aside
  4. For the Sausage
  5. Cook ground pork and garlic, salt, pepper and oregano together.
  6. Add onions and cook until tender.
  7. Add celery and remaining herbs. Cook for 2 minutes.
  8. Stuffing
  9. Combine bread cubes and meat mixture in a large baking dish or roaster. If you are making this a head of time, cover the stuffing and place in the fridge. Do not add any liquid until ready to bake. If your baking right away continue to the next step.
  10. Pour in melted butter and chicken stock.
  11. Cover and bake at 350F for 45 to 60 minutes.

Christmas is just over a month away.  It is a holiday that brings joy to my heart.  Christmas is an extra special day to celebrate the birth of our saviour Jesus.  But for many people it’s a time of stress.  You want to give gifts to all of your family and friends.  But money is tight, or the stress of shopping this time of year is overwhelming.   You need to take a step back and make a game plan.  This will keep you from over spending.

1.  Make a list of everyone you feel you need to give gifts to.  Your children, spouse, parents etc.  It’s YOUR list and everyone’s will be different.

2. For extended family and workplace friends organize a secret Santa exchange.  Set a dollar limit up front.  With a little thought you can easily find a low priced but special gift for that person, or make one!

3. Give the gift of homemade treats!  I have yet to meet anyone who doesn’t love home baked cookies, breads, pies etc.  Making these your self is fun, get the kids helping!

4.  Make themed gift baskets.  Look at the people on your list, what hobbies do they enjoy?  Are any tea or coffee lovers?  Go to the local thrift shop or dollar store and pick up some baskets.  Add some coffee or tea mixes a pretty mug etc.  Maybe tuck in some cookies to go a long with them.  For a gardener a pretty flower pot (paint it yourself!) seeds, mini garden tools etc. work wonderfully.

5. Give the gift of time.  Do you have elderly neighbors?  Maybe elderly family members who have a hard time getting out.  Go and spend a few hours with them.  Share a tea, read together they will treasure your visit.

6.  Share a skill.  Do you knit, crochet, quilt, bake, can, garden etc.?  There are many people who would love to learn these things.  Volunteer to teach them.  Perhaps a gift basket with the tools to practice along with a coupon book for “lessons” would be a nice surprise!

7.  Before heading to the stores check the facebook and twitter pages for your favorite places.  Many put up coupons, sale codes on these sites.

8.  Shop online!  Many stores offer free shipping and have products lower priced online then in the store!  Take advantage of that.  Besides it’s nice to shop in your jammies with a hot coco isn’t it?

9.  Buy gifts of items that are needed.  When I’m going to spend money on something it has to be practical and something we would use anyway.  A new coat, winter clothes, replacing an old or broken appliance.  I needed item will be used and remembered for a long time.

10. Gift cards!  I love gift cards, but you need to buy them wisely.  Find out where the person likes to shop.  You don’t want to give a gift card to a store that they never shop at.  If they are online users sites like Amazon are great.  They sell a wide range of items, at a low price and have free shipping.  Gift cards to favorite restaurants are a nice treat to.

 11.  Make your own coupon books up for family and friends.  If you love kids you could make up a baby sitting coupon book.  That would be so much appreciated by the tired mom’s and dad’s on your list!  You could also make up booklets with a variety of coupons.  Some for yard work, spring cleaning, walking the dog, lunch out, a movie etc.  Think about what would be special to that person.

Remember don’t let the holiday stress you out.  This is a special time to share with family, friends and thous  in need the love of our Lord Jesus.  Don’t let over commercialism bring down your holiday!

For the past month of so, we have been getting small amounts of snow.  Normally we have an inch or so on the ground, then it would warm up rain and melt away.  But it looks like winter has come to stay now.  Late Saturday night the winds started to pick up.  By Sunday morning it was snowing hard!  We are still getting snow squalls and it looks like it will snow all week.  Right now there is a foot or more of snow on the ground.  When hubby went out to blow the driveway out today he said there was a 3 foot drift in front of the barn.

Although the cold winds are strong (-15 C wind chill) the snow sure is pretty!

We put our Christmas tree up last night, I will post photos later.  The kids had a wonderful time decorating it.

 

Normally I don’t have long gaps between posting.  But I decided to take a little unplanned break from blogging and most of my online activities.  I needed some R&R to try and shake all the colds and such I was coming down with.  I’m starting to feel much better now and I hope to be posting more often again.

The weather has been quite cold and rainy here.  From what they are saying it’s going to warm up the next few days but rain.  That’s to bad!  I would have loved a 12C day to enjoy one more hike.  Instead it will be to damp and rainy to venture outside much.  Then midway during next week the temps are to really start dropping off and a chance of snow every day.  Soon the snow will come and STAY!  The prairie provinces are already getting a deep freeze and snow.  I heard Northern Ontario is also getting a good bit of snow.

This week I have a few projects I have to get moving on.  I need to get my Christmas cards and letters ready.  I REALLY have to get moving on my knitted gifts.  Being sick has really slowed me up a lot this year.  I had hoped that I would have everything done by now.   I will post a list soon of the craft projects I’m working on.

 

Well it’s been a little while since I’ve had time to knit.  Oh was I ever missing it!  Knitting is really a good therapy, a quiet time to sit and relax.

I finished another balaclava, this one is for my uncle.  It’s an umm quite late Christmas present.  LOL!  I have two  more to make now.  I’m going to cast on 1 today.  But knitting with all this black is driving me nuts.  It’s plain and boring and hard to see to!  So I’m going to start another project as well.  Maybe I’ll start on the fingerless gloves for next Christmas…Or maybe I’ll start on some longies, although I have some nice blue yarn calling me to make a shawl to…Oh the choices….

 

I would like to say thank you for all the nice letters and wish all a good and safe holiday season.  Let us remember those who are less off than we are weather they are close or distant we are all in this together.

 
Ahh I’ve been so busy, just haven’t had enough time to sit down and visit.  What I’ve been up to….

Last Friday we took out traditional light drive.  Each year around Christmas time we bundle up and head to town.  We take a slow drive around letting the little ones see all the lights.  It’s a wonderful sound to hear their excitement.  Two year olds are especially bursting with excitement.  It’s the first time they can really see and enjoy the lights.

Normally we get hot chocolate for our trip, but we were running quite late.  So dh treated us to a pizza supper out.

Saturday some dear friends called to see if they could drop by.  We were all so glad, it’s been far to long since we’d been able to visit!
Latter in the day dh went out to do his Christmas shopping and pick up my birthday cake.

Sunday, yup you guessed it, my birthday. :-)   I had a very nice day.  Hubby got up early with the little ones so I could sleep in.  He made a wonderful breakfast for us.  Then I spend the afternoon making fleece blankets.  Latter on he made my favorite supper.  Tomato pasta, garlic bread and caesar salad.
CBC was running many Christmas movies that night, so we all curled up in the living room to eat and watch.  They were playing I’ll be home for Christmas, Pooh Bears Christmas, The Grinch Cartoon, and Christmas Vacation.
 

I love making no sew fleece blankets for gifts.  They are so quick and easy to make, yet beautiful and useful as well.   This year I’m making smaller lap blanket size ones, 1 meter long.   Hope you enjoy the video.  To read step by step instructions see here.

 

I finished another knitting project and it’s a hit!  This is for my BIL for Christmas, but dh was kind to model it for  photos.  He loves it and wants one as well.  I’m hoping to start on that today.

The pattern is Easy Balaclava and you can find it here on Ravelry or on Knitting in Color’s blog.

The only change I made to the pattern was to use a bulky weight yarn.  This gave me a men’s large size and it fits great.  Yarn used Cascades Eco +.

 

Its been snowing all night and still coming down hard.  For the 3rd day in a row, schools were closed and most of the roads in our area as well.
Its a good day to sit and knit!
