When I was a little girl our family often made a braided apple bread.  It was one of my favorite treats I looked forward to each winter!  Unfortunately I don’t have our family recipe and so I’ve been trying to recreate it.  This recipe uses the dinner roll recipe I posted the other day.  But you could also use your favorite bread recipe or my basic bread.

While this isn’t quite what I remember from childhood, it’s wonderful!  I had to hide the last piece so hubby would be able to try some. lol  We’ll be making this often over the winter.

Braided Apple Bread

Ingredients

    Filling
  • 5 Apples pealed and sliced
  • 1/2 Cup sugar
  • 2 Tsp cinnamon
  • For the bread dough
  • 1 Cup Warm water
  • 3 Tbs Sugar
  • 3 Tsp Yeast
  • 1 Tsp Salt
  • 2 Tbs Butter
  • 1 Egg
  • 3 to 3 1/4 Cups All Purpose Flour

Instructions

    Filling
  1. Peal and slice apples.
  2. Mix with sugar and cinnamon.
  3. Pour into a baking dish and bake at 350F for 10 to 15 min.
  4. To Make in a bread machine
  5. Combine all dough ingredients in the order specified by your manual. Select the dough setting. Then continue at step 10.
  6. To make by hand
  7. Combine warm water, sugar and yeast in a bowl. Let sit for 10 min.
  8. Stir in butter, salt and egg.
  9. Stir in flour.
  10. Kneed for 10 minutes.
  11. Cover and let rise until doubled in size.
  12. Roll our dough into a square and cut 1 inch slices from the sides.
  13. Pour apple filling in the middle.
  14. Fold the top of the dough in and fold sliced dough strips over each other to braid.
  15. Transfer to a baking sheet and bake at 350F for 25 minutes.

These are our family’s favorite dinner rolls.  They are so easy to make, light and fluffy on the inside with just a slight crust on the outside.  Yummy!

I make these in my bread machine, but they work up just great by hand to!

The Best Dinner Rolls

Prep Time: 1 hour, 30 minutes

Cook Time: 20 minutes

Total Time: 1 hour, 50 minutes

Yield: 23 Rolls

Ingredients

  • 1 Cup Warm water
  • 3 Tbs Sugar
  • 3 Tsp Yeast
  • 1 Tsp Salt
  • 2 Tbs Butter
  • 1 Egg
  • 3 to 3 1/4 Cups All Purpose Flour

Instructions

    To Make in a bread machine
  1. Combine all ingredients in the order specified by your manual. Select the dough setting.
  2. Form into rolls and place on greased baking sheet 2 inches apart.
  3. Cover and let rise for 30 minutes or until doubled in size.
  4. Bake at 350F for 20 to 25 minutes.
  5. Rub the tops with butter.
  6. To make by hand
  7. Combine warm water, sugar and yeast in a bowl. Let sit for 10 min.
  8. Stir in butter, salt and egg.
  9. Stir in flour.
  10. Kneed for 10 minutes.
  11. Cover and let rise until doubled in size.
  12. Punch down and forum into rolls. Place on a greased baking tray 2 inches apart. Cover and let rise 30 min or until doubled.
  13. Bake at 350F for 20 to 25 min.

In my last cooking video I showed how to make your own baking mix.  This you can substitute for any recipe calling for Bisquick.

Today I’ll show you my favorite way to make biscuits!  I have another recipe, my Grandmothers biscuit recipe.  I love it also, but dh thinks these are better.

How To Make Biscuits

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 20 biscuits

Ingredients

  • 6 cups baking mix
  • 2 cups water

Instructions

  1. In a medium size bowl combine 6 cups baking mix and 2 cups water. Stir until the dough starts to come together.
  2. Turn out onto a floured surface and kneed about 10 times. Don't over kneed or your biscuits will be tough.
  3. Roll out 1/2 inch thick and cut out using your biscuit cutter or a drinking glass.
  4. Place on an ungreased baking sheet. Bake at 425F for 10 - 15 minutes. Tops should be just turning light brown when done.

A good friend of mine needed to go gluten free.  I understand just how challenging that can be!  When my now 4 year old dd was a toddler she reacted badly to gluten and milk.  Thankfully it only lasted just over a year.    Dear friend decided to sell her grain mill since it had been used with gluten flours.   It’s now a much loved addition to my kitchen.   Now I already own the family grain mill with a hand base and I do like it.  However I find it to hard to grind large amounts of grain with it daily.

Today I gave it a try and ground enough wheat to make my normal bread recipe.  What can I say I LOVE fresh whole wheat bread!  I made four loaves and two are gone already!  One was devoured before it finished cooling.  The other was turned into garlic bread.  That went great with our pizza supper.  Now if I could just find a local source for taller bread pans!  All our area sells are 8 x 4 inch.

 

This is how we make our garlic bread.  Goes great with pizza or pasta.  Hope you enjoy!

Our favorite ginger bread.

Ginger Bread

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Ingredients

  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 egg
  • 1 cup molasses
  • 2 1/2 cups flour
  • 1 1/2 tsp soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1 cup water
  • 1 cup raisins

Instructions

  1. Place raisins in hot water to soak for 5 minutes then drain.
  2. Beat egg and add in sugar, butter and molasses mix well.
  3. Combine dry ingredients and add to the wet ingredients. Mix and add 1 cup of hot water. Mix well and add raisins if desired.
  4. Pour into a 9x13 pan and bake at 325F for 45 minutes.

There is nothing like warm fresh bread and it’s so easy to make!  This is my basic white bread recipe.  I recommend practicing making white bread a few times, then moving on to whole wheat bread.  White bread rises easily and enjoyed by family members who might not like the heavier taste of whole wheat breads.

Basic White Bread

Prep Time: 1 hour, 40 minutes

Cook Time: 20 minutes

Total Time: 2 hours, 10 minutes

Ingredients

  • 3 cups of warm water
  • 1 cup milk (optional replace with water if not using milk)
  • 5 tbs butter or oil (1/4 cup)
  • 4 1/2 tsp yeast (or 2 paks)
  • 1 tsp salt
  • 5 tbs sugar or 1/4 cup of honey
  • 2 or 3 eggs (optional)
  • About 7 cups of flour

Instructions

  1. Place warm water in a large bowl, add sugar or honey and stir to dissolve. Then add yeast and let it sit for about 10 minutes.
  2. Meanwhile warm the milk up in a pot and add the butter to melt. Don't boil it just get it nice and warm. Add this to your yeast mixture and add salt and eggs. Stir well.
  3. Start adding the flour a few cups at a time until well blended. Keep adding flour until you have a soft dough. It will come a way from the sides of the bowl.
  4. Then turn it out on to a floured surface and kneed for 10 minutes. The dough will be nice and smooth. Place in a greased bowl covered with a tea towel or plastic wrap and let it rise till doubled in size. About an hour.
  5. Punch the dough down and divide it into 3. Pat each piece into a greased loaf pan. Let it rise about 20 minutes and bake at 350F for 25/30 minuets. To tell if it's fully cooked take the loaf out of the pan and tap the bottom it will sound hollow when done.
