Its that time of year again! The gardens starting to produce and I’m dehydrating and canning for the winter. Dehydrating zucchini is so easy to do and saves a lot of freezer space!
Wash and slice your zucchini into 1/4 inch slices, or shred. Place on your dehydrator rack and dehydrate at 115F until done. Mine took about 24 hours in the high humidity weather we have been having.

We have lots of zucchini on the farm & I would love to try this, but how do you use it later? Do you put it in soups or…? I am just never sure what recipes to use it with.

The shredded is great in zucchini breads. I also add it to my pasta sauce.
The slices are great in casseroles, stir fry’s etc.
Zucchini takes on the taste of what you cook with it. So you can add it to many recipes!
When adding dehydrated zucchini directly to your recipes… (example: Zucchini Bread) How much extra water do you need to add to the recipe?

I don’t measure it. But I would add enough so the batter is runner more like a pancake batter, then a thick muffin or quick bread.
