Early last week the weather was so nice.  Day time temps. were in the 5C to 10C ranged, it really felt like spring.  We headed out and tapped our best maple tree.  Over the next few days we collected enough sap to cook down to 1 1/1 pints or so of maple syrup.  Yummy!!  We’ve been enjoying it on French toast quite a bit.

Unfortunately the nice weather didn’t last to long, it’s been feeling more like January lately.  Today we’ve had very strong winds from the east.  Normally you can’t hear the wind howling in the house but today you sure could.  It’s a icky mess of snow and ice pellets outside right now.  It looks like it will be like this all week.  BUT if they are right, starting this weekend it will warm up again and be lovely next week.  I hope so, we are so ready for spring!  Also the sap will start to run again!

Last week was our spring break and hubby took it as holidays as well.  So we had a great week for R&R, we had lots of time to help Mickey our new pup settle in.  He’s doing very well, but still can’t figure out why the cat’s don’t want to play with him.  One of them wants to but isn’t quite sure about him yet.

  1. Sounds like lots of happenings going on at your homestead. I love maple syrup SO much…nothing like the real thing is there? Today our weather is sunny but cold…we are to get snow on Thursday…but who really knows. We haven’t had snow since Christmas Day…just lots and lots of rain:-)

    Our children are on spring break this week and next. so trying to get yard work done while the sun is shining. Got our lawn cut for the first time…was really getting long. Our crocus’s are up and pretty purple everywhere. Our fruit trees are budding along with other trees…spring is on the way.

    Dh finishing up our new chicken coop so hopefully we can get our chickens moved over soon. I’m sure they will be happy in their new home.
